Tomato and basil soup

An easy, quick and very light version of traditional gazpacho
INGREDIENTS (for 4 pax):
- 1kg of pear tomatoes
- 10-12 fresh basil leaves
- 1 pinch of salt
- Balsamic vinegar of Modena
- EVOO
*Measurements are approximate, you can make it to your liking!
ELABORATION:
- Remove the stem from the tomatoes and cut them into 4 pieces (including the skin). Add the basil leaves, a good splash of vinegar and a pinch of salt. Blend well.
- Add a splash of oil and blend for 2 seconds. The reason we add the oil later is because we don't want it to emulsify, just to integrate with the rest of the ingredients.
- If you prefer it without texture, you can pass it through a strainer.
