
Cream of shrimp
You'll be a hit with this delicious shrimp cream, perfect for this Christmas.

INGREDIENTS (6 pax) :
- 500g of shrimp (about 18 pieces)
- 2 onions
- 1 carrot
- 1 leek
- 1 branch of celery
- 2 tomatoes
- Thyme
- Laurel
- Brandy
- 1.35 L of fish stock
- 100-150cc of liquid cream
- Salt and pepper
- Cayenne pepper
- Chives
PREPARATION :
- Chop the vegetables and sauté them in a saucepan with the aromatic herbs.
- Peel the shrimp (removing the intestine) and sauté the tails
- In the same oil, add the heads and skins, cook everything, mashing well to extract the juice from the heads. Add a splash of brandy and evaporate.
- Add the stock and let it boil
- Add this mixture to the vegetables, pressing the shrimp heads in the strainer to release all the juice.
- Add liquid cream and blend
- Plate by adding shrimp tails and chopped chives
