You will triumph with this delicious shrimp cream, perfect for this Christmas

📝INGREDIENTS (for 6 pax):
🔸500g of shrimp (about 18 pieces)
🔸2 onions
🔸1 carrot
🔸1 leek
🔸1 celery branch
🔸2 tomatoes
🔸Thyme
🔸Laurel
🔸Brandy
🔸1.35 L. of fish stock
🔸100-150cc of liquid cream
🔸Salt and pepper
🔸Cayenne pepper
🔸Chives
🧑🍳PREPARATION:
🔹Cut the vegetables and sauté them in a saucepan along with the aromatic herbs
🔹Peel the shrimp (removing the intestine) and sauté the tails
🔹In the same oil, add the heads and skins, cook everything, mashing well to obtain the juice from the heads. Add a splash of brandy and evaporate.
🔹Add the stock and let it boil
🔹Add this mixture to the vegetables, pressing the shrimp heads in the strainer to pour out all the juice
🔹Add liquid cream and blend
🔹Plate adding shrimp tails and chopped chives
