Pea cream
A recipe from the great Toya Roque for success and, above all, FOLLOW IT TO THE LETTER!!
INGREDIENTS :
- 900g of good quality frozen peas (Findus, Aldi are also very good...)
- 6dl of vegetable broth (always accompany vegetable cream with vegetable broth)
- 3dl of cream
- Pepper and salt
- 100g of butter
- EVOO
- Salmon roe
The salmon roe is from @peixacasa, and you'll never believe what a special touch it gives to the dish. You can also elevate your dish with foie gras, jabugo shavings, or a poached egg.
PREPARATION :
- Cut the onion into half-moon pieces and sauté it in a deep saucepan with butter, oil, salt, and pepper. Cover and cook over low heat until golden.
- When it is transparent, add the peas and sauté for a few minutes.
- Add the broth and let it boil for 20 minutes over low heat, semi-covered (until the peas are soft)
- Add the cream and season with salt and pepper.
- Blend it well (if it is not very fine, you can pass it through a sieve)
- Serve warm on a plate and add the salmon roe with a spoon.
