
Salmon with a crispy pistachio crust and mango salad
IMPRESS with this crispy pistachio-crusted salmon !
An easy, elegant and delicious recipe
INGREDIENTS (8 people):
FOR SALMON
- 8 salmon loins
- 100 g of pistachios
- 20 g of breadcrumbs
- 40 g grated Parmesan
- Soy sauce
- Olive oil, salt and pepper
FOR THE SALAD
- Arugula
- Mango
- Avocado
- Red onion
- Cilantro
- Dressing based on lime, oil, honey and mustard
PREPARATION :
SALMON
- Grind pistachios, breadcrumbs, and Parmesan cheese. Add salt, pepper, and oil, and blend again. Tip: Don't over-grind; it's okay to see the chunks.
- Season the loins with salt and pepper and add a splash of olive oil and soy sauce.
- Cover only one side of the salmon and the sides with the mixture and place it on a tray with the crust facing up.
- Bake at 180°C for 12 minutes. Tip: If the crust isn't looking very crispy, you can add oil two minutes before removing it from the oven.
SALAD
- Cut the onion into julienne strips. Tip: Let it sit in a bowl of water and lemon juice. This will enhance the color and soften the flavor.
- Prepare the dressing in a jar: add salt, the juice of half a lime or lemon and a little zest, a pinch of honey, EVOO, and a little Dijon mustard. Tip: It's very convenient to make it in a jar because you can shake the mixture well and let the oil emulsify.
- Dice the mango and avocado
- Remove the seeds from the inside of the chili (they are very spicy) and cut it into small pieces. Also chop the cilantro.
- Add all the ingredients in a bowl with the arugula
