Chickpeas carbonara

A recipe that we made with Marga Freudenthal, from our friend Jesús, very easy and quick to make that will surprise you.

INGREDIENTS :

- 400 gr of chickpeas

- Quick julienned candied onions (you can also make caramelized onions at home)

- Guanciale

- Pepper and salt

- Grated Parmesan cheese

- 3 egg yolks

The cheese and the guanziale are delicious and for those from Barcelona, ​​we found the best chickpeas at Llegums Sumarroca.

PREPARATION : 

- Cook the chickpeas or, if you have already bought them cooked, heat them in a covered pot over low heat.

- Add a little butter to a pan with the onion and, once combined, add the guanciale. Let it sauté. *Tip: add a little oil to prevent the butter from burning*

- Beat 3 egg yolks and add the parmesan powder, salt and pepper to taste

- Add the "sofrito" and mix until you get a "homogeneous sauce." Finally, add the previously heated chickpeas.

Parmesan Crispy

- Put a little butter in a pan, spread it well and add a thin round of Parmesan cheese and a pinch of salt on top.

- Leave it for a few minutes, until you see that the bottom is starting to brown.

- Turn the cookie over and let it brown on the other side.

- Remove it and let it dry on kitchen paper to absorb the moisture.
